- 2 potatoes, peeled and cut into fine matchsticks
- 2 medium onions, cut into thin strips
- 100 g ham slices, cut into strips
- 4 eggs, beaten
- salt to taste
- 1 cup olive oil (for frying)
- In a skillet heat the oil. Deep fry the potatoes along with the onion until golden. Drain and set aside.
- Leave very little oil in the skillet. Sauté the ham. Stir in the egg, fried potatoes and fried onion. Season to taste.
