Confit of Potatoes

  • 2 large potatoes, peeled and cut into strips/ or diced
  • 1 cup olive oil


  1. Pour the oil in a thick-bottomed skillet. Add the potatoes to the unheated oil. Heat over a medium heat. Toss to coat completely.
  2. Cover with a lid. Stir occasionally. When the edges start being round turn down the heat to low. When beautifully tender uncover to slightly brown the potatoes.
  3. Drain and serve.
